Relax first and don't see opening a bottle as a daunting task. In fact, even the best sommeliers can accidentally break the cork when opening a bottle, but serious study can help us avoid this situation to the greatest extent possible.
First, aim at the center of the cork and insert the corkscrew's auger bit, which is the key to a smooth cork. With the auger in place, start turning the corkscrew. When turning, don't just use the wrist to exert force, and use the arm, wrist and palm to exert force evenly. Also, don't turn the corkscrew sharply, or the auger bit can easily go out of line. If the cork breaks, place the bottle on a stable surface and insert the auger bit into the center of the cork, but don't turn it, use the other hand to slowly turn the bottle.
If the cork does eventually break, don't push it into the bottle too quickly, as this could contaminate the wine. Find a way to move as much debris out of the bottle as possible.
Do not use cheesecloth or coffee filters if you want to remove cork bits from the wine. Although they are sterile, they can affect the taste of the wine. The best way is to filter the wine with a 100% clean stainless steel filter.
